On old friend/co-worker would bring this to pot lucks. It was amazing and he gave us the recipe.
Ingredients:
- 16oz medium egg noodles
- 6 eggs
- 1 heaping cup sugar
- 16oz cottage cheese
- 16oz sour cream
- 1/2lb butter
- mixture of sugar and cinnamon
None of the amounts are crucial and can be varied.
Directions:
Boil the noodles in a large pot.
While the noodles are boiling, beat the eggs in good size bowl. Add the sugar, cottage cheese, and sour cream to the eggs, mixing thoroughly.
When the noodles are done, drain them in a colander, and melt the butter in the warm pot under low heat.
When the butter is melted, turn off heat, return the noodles to the pot and mix them thoroughly with the butter until they are well coated.
Then pour the egg/sugar/cheese mixture into the noodle pot and mix everything thoroughly.
Grease a 16”x9” baking pan and pour the mixture into the pan. Sprinkle the sugar/cinnamon mixture over the top in a thin layer, just enough to coat the top.
Bake in an oven at 300F about 35-45 minutes. When finished it should be brown on top and “wiggle” like thick jello. When making a double size recipe, cook at about 275 degrees for about 60 minutes.
Note: An alternative is to cook at 275 degrees for about an hour. This slower cooking leads to less browning/blackening on top.
Cooking time and temperature will vary based on the oven and pan size.
The goal is to cook it all the way through, but not too much so it is still moist, and not have it get too brown (or burnt) around the edges.
Cut into squares and serve warm if possible. Unused portion keeps best if left uncut and covered in the refrigerator.
